Rice Krispie Treat Ice Cream Sandwiches
Ingredients:
- 6 cups Rice Krispies cereal
- 10 oz about 4 cups mini marshmallows
- 3 tbsp unsalted butter
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 quart ice cream your choice of flavor
- Sprinkles optional, for decoration
Instructions:
Heat a large saucepan over low heat to melt the butter
When the mini marshmallows are fully melted and smooth, add them and stir continuously
After taking the saucepan off of the burner, mix in the salt and vanilla extract
When the cereal is thoroughly covered with the marshmallow mixture, add the Rice Krispies and stir
Flatten the mixture evenly with your hands or a greased spatula and press it into a 9 x 13-inch baking dish
Give the Rice Krispie layer approximately half an hour to cool and solidify
After cooling down, take out the layer of Rice Krispies from the baking dish and transfer it to a chopping board
Cut out circles for the top and bottom of each ice cream sandwich using a round cookie cutter
To make a sandwich, place one Rice Krispie circle with a generous scoop of ice cream on top, then cover with another circle
Roll the ice cream sandwich's edges in sprinkles for decoration, if you'd like
To make more ice cream sandwiches, repeat this process
To make the ice cream sandwiches firmer before serving, put them in the freezer for at least two hours
