Low Fat Coleslaw
This Low Fat Coleslaw is a healthier twist on a classic favorite. With a creamy yogurt-based dressing and a touch of honey, it's a delicious side dish or topping for sandwiches and burgers.
Ingredients:
- 4 cups shredded cabbage
- 1/2 cup grated carrots
- 1/2 cup plain Greek yogurt
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
Shred the cabbage and grate the carrots into a large bowl
Greek yogurt, low-fat mayonnaise, Dijon mustard, apple cider vinegar, and honey should all be mixed together well in a different bowl
Put the dressing on top of the carrots and cabbage, and then toss them around to cover them all
Add salt and pepper to taste to the coleslaw
To let the flavors blend, cover and put in the fridge for at least 30 minutes before serving
