Vegan Cranberry Lime Coconut Jelly Shots



Cranberry and lime flavors are paired with coconut milk to make these vegan jelly shots. They're a delicious treat that's great for parties or as a cool dessert.

Ingredients:

  • 1 cup cranberry juice
  • 1/2 cup coconut milk
  • 1/4 cup lime juice
  • 2 tbsp agar agar powder
  • 1/4 cup sugar
  • 1/4 cup shredded coconut optional
  • Lime zest for garnish optional

Instructions:

Mix sugar, agar agar powder, lime juice, cranberry juice, and coconut milk in a saucepan

Over medium-low heat, bring the mixture to a boil while stirring it all the time to break up the agar agar and sugar

Lower the heat and let it simmer for 5 minutes after it starts to boil

Take it off the heat and let it cool down a bit

Put the mix into shot glasses or molds made of silicone

You can top each jelly shot with shredded coconut if you want to

Put it in the fridge for at least two hours, or until it sets

Add lime zest to the top before serving once it's set
